Preparation

1.

Preheat your oven to 200°C / 400°F. Place the multigrain rolls on an oven rack and bake for 10–12 minutes. Once baked, remove them from the oven and allow them to cool for 5–10 minutes

Thinly slice the cucumber and set aside in a bowl.

Finely chop the shallot and finely slice the fresh mint. In a bowl, mix together the whipped cream cheese, mint and shallot.

Add a splash of lime juice, season with salt and pepper, then mix again until smooth.

Make a slit in the top of each roll without cutting through the base, then gently hollow out the inside slightly.

6.

Spread the whipped cream cheese mixture inside each roll. Add a few prawns, followed by some cucumber slices.

7.

Gently press the rolls closed and enjoy.
