The Korean egg sandwich, also known as the Gyeran sandwich, is a Korean speciality. It consists of a baguette filled with mashed hard‑boiled eggs, mayonnaise, crunchy vegetables (here, we use lettuce) and a lightly spiced mayonnaise dressing. It is a popular option for breakfast or as a light snack throughout the day.

Preparation

Preheat your oven to 200°C / 400°F. Place the baguette halves on an oven rack and bake for 10–12 minutes. Remove from the oven and allow to cool for 5–10 minutes.

Hard‑boil the eggs, then peel them. Roughly chop all three eggs until crumbly but not smooth.

In a bowl, combine the chopped eggs with the mayonnaise, finely chopped celery and chopped onion (or chives). Season with salt, freshly ground black pepper and a pinch of curry powder. Mix gently until creamy.

4.

Slice the baguette in half lengthwise. Place a leaf of lettuce on the bottom half of each baguette.
